Figures we give for steel hardness, edge angle, blade length and edge retention describe the specification our knives are built to. Real-world performance depends heavily on how a knife is used, what it is used on, and how it is maintained. A blade cut on glass or run through a dishwasher will not behave the way the specification suggests.

Statements about how long an edge lasts are based on normal domestic use with regular honing. They are not guarantees, and they are not a substitute for the warranty terms set out in our Terms of Service.

Safe use of sharp tools

Our knives are finished to a 15-degree edge and are considerably sharper than most kitchen knives out of the box. They can cause serious injury if handled carelessly.

• Keep them out of reach of children at all times.
• Store them in the case, in a block or on a magnetic strip — never loose in a drawer.
• Cut on wood or plastic only, and never towards your hand.
• Wash by hand, blade away from you, and dry immediately. Never leave a knife in a sink of water.
• Never try to catch a falling knife.
