Description

What is in the case

  • Chef's knife, 8″ — the blade you will reach for most
  • Santoku, 7″ — flat-profile all-purpose blade
  • Nakiri, 6.5″ — straight edge for vegetables
  • Bread knife, 8″ — serrated, for crusts and tomatoes
  • Carving knife, 8″ — long and narrow for clean slices
  • Boning knife, 6″ — flexible enough to follow a joint
  • Utility knife, 5″ — the gap between chef and paring
  • Paring knife, 3.5″ — peeling and detail work

Specification

  • Blade: high-carbon stainless steel with a hand-finished layered etch
  • Hardness: approximately 58 HRC
  • Edge: 15° per side, dual bevel
  • Handle: resin-stabilised pakkawood, triple-riveted, full tang
  • Bolster: forged and integrated, not welded
  • Case: rigid lined presentation box, suitable for gifting

Care

  • Hand wash in warm soapy water and dry straight away. Never put these in a dishwasher.
  • Cut on wood or plastic. Glass, stone and steel boards will roll the edge.
  • Store in the case, on a magnetic strip, or in a block — not loose in a drawer.
  • Hone regularly; a full sharpening once or twice a year is plenty for home use.

Ray Calloway's hands setting a bevel on the grinding wheel in the Modular Ready workshop

The person behind the bench

About Ray

I am Ray Calloway, and Modular Ready started in a rented unit off West Market Street with one grinding wheel and a very patient landlord. What I wanted was simple: a set of knives I would actually be happy to hand somebody, at a price that did not assume they were furnishing a restaurant.

For years that is what this bench did. I picked the steel, set the bevels, and packed the cases myself. Plenty of customers wrote back after a few seasons to say the chef's knife was still the one they reached for, and that is the only review I ever really needed.

We are winding the workshop down now, and the remaining stock is going out at what it cost us to make. If one of these ends up on your counter, I hope it stays there for a long time.

A knife slicing courgette on a bamboo board
I bought one set during the sale and a second for my sister a week later. They arrived sharper than anything I have owned and the case is genuinely gift-ready. Avery M. · Louisville, KY Verified
Overhead view of vegetables being prepped
I run a small catering kitchen. These have held their edge through six months of daily prep, which is more than I can say for the block I replaced. Dominic R. · Portland, OR Verified
Chopping parsley on a wooden board
The balance is what surprised me. The weight sits right at the bolster, so long prep sessions stop wearing out my wrist. Priya N. · Austin, TX Verified
Flat lay of prepped ingredients around a knife
I was sceptical about the price drop, honestly. Then it turned up, and the finish on the blades is the real thing. Tom B. · Chicago, IL Verified
Fresh herbs and a red pepper on a cutting board
Ordered the day I read the workshop was winding down. Very glad I did. Nothing else in my drawer gets used now. Elena T. · Providence, RI Verified
Preparing courgette on a wooden board
Good enough looking to leave on the counter, and I still reach for the santoku every single evening. James W. · Denver, CO Verified

Why it is worth it

We stand behind every blade

  • Hand-honed 15° edgeEach blade is finished to a 15-degree bevel per side, so it parts food cleanly instead of crushing it.
  • High-carbon stainless steelHardened to roughly 58 HRC — hard enough to hold an edge, tough enough not to chip.
  • Full-tang constructionThe steel runs the whole length of the handle. No hollow grip, no wobble over time.
  • Pakkawood handlesResin-stabilised hardwood that will not swell, warp or soak up water at the bolster.
  • Forged integrated bolsterAdds weight where your pinch grip sits and shields your fingers from the heel of the blade.
  • Balanced for long prepEach knife is weighted to sit still in the hand, which is what actually reduces fatigue.
